I don't know who could have played Apollo Creed in the Rocky films better than Carl Weathers. With his real-life athletic background and exceptional acting, the New Orleans native was perfectly cast for the role.
But you can't just watch one Rocky movie. To fully appreciate the whole storyline of Rocky Balboa and Apollo Creed, I recommend successively watching the quadrilogy:
It is hands down one of the best film series in cinema. Rocky earned several accolades and won Best Picture, and Rocky II follows right after the last fight in the first movie. And by the way, the director's cut of Rock IV has a deleted scene with Apollo.
Carl Weathers is so talented and somebody to aspire to. How many people do you know played professional football, starred in Hollywood films, played music, wrote songs, and directed episodes of The Mandalorian?
I was saddened to hear about Weather's passing, and he will be sorely missed, but I take solace in knowing he had a very successful life and career.
Rest in peace, Carl Weathers.
